Denise’s Baked Corn

Denise usually makes this for family gatherings and it’s ALWAYS a hit. I absolutely LOVE it! -Penny

  • 8 oz Cream Cheese [Reg or Lite or FF]
  • 2 Tbls Margarine
  • 1/4 c. Milk
  • 1/2 tsp Garlic Powder
  • 2 cans Corn, drained
  • 2 cans Chili Peppers, diced, not drained
  • 2 Tbls Chopped Onion, if desired

Preheat oven to 325 or put in 1 1/2 quart microwave safe dish and cook for 15-20 minutes.

Soften 8 oz cream cheese, add 2 Tbls margarine, 1/4 c. milk and 1/2 tsp garlic powder. Stir to mix well. Add 2 cans drained, whole kernel corn (canned or frozen) and 2 cans of Chili peppers (not drained) and some chopped onion, if desired. Mix well. Bake uncovered for 20-25 minutes. I’ve also cooked this in the microwave and it’s good too!


Pork n Bean Salad

Pork n Beans (drain some of the juice off)

chopped green onion

chopped tomato

chopped cucumber

chopped boiled eggs

Hellman’s Mayo.

Mix all together. chill and serve.


CHINESE FRUIT SALAD-(Dori C.)

CHINESE FRUIT SALAD-Chamberlain family favorite!
2 cans chunk pineapple (may want to chop bits in half) drained
2 cans mandarin oranges, drained
2 cups miniature marshmallows
1 cup Coconut
1 cup chopped pecans, larger pieces are preferred
1 cup sour cream
Mix together and chill. This salad can be made the night before.


Vermicelli Salad (Dori C.)

Boil 12oz. pkg. of vermicelli, broken into small pieces. Rinse and cool.
Add: 3 tsp. Accent
3 tbls. Lemon Juice
1/2 c. Oil
1/2 tsp. Salt
1 tsp. Garlic Powder
Set aside in refrigerator. Stir occasionally. Chill overnight.
Next day add: 4oz. sliced black olives
4 oz. jar chopped pimentos
1/3 to ½ Cup Mayonnaise
Tops chopped of 4 or 5 green onions (I put the whole onions in)
