Weight Watchers Pumpkin Muffins

Makes 6 muffins (1 serving)  that equals 1 morning or mid day meal. 1 Bread/1Fruit/1Protein/1Milk/1/2 Veg

Grandma Kathy used to make these when she did weight watchers.

1 cup cooked pumpkin
1/4 cup raisins (I omit this)
1 t vanilla
1/2 cup shredded raw carrots
2 eggs
2 t cinnamon
6 T flour
1/4 t butter buds or butter flavor
2 t baking powder
1/2 t soda
2/3 c non fat powdered milk
2 t pumpkin pie spice
8 t sugar OR 4-5 packets of Sweet N Low

Mix all dry ingredients and pour into wet ingredients.
Spray PAM in 12 muffin tins.
Bake 350 for 25-30 minutes.


Pumpkin Coconut Bread

Marie from First Baptist Church, Noble, Oklahoma used to make this for us and we loved it. She was kind enough to share her recipe.

1/4 c crisco oil

5 eggs

2 c pumpkin

2 1/2 c flour

2 c sugar

1 t baking soda

1 t salt

1 t cinnamon

1 c chopped nuts (opt.)

2 (3oz each) boxes of Jello coconut pudding and pie filling (not instant)

Mix oil, eggs, and pumpkin together, add rest and mix well. Bake in 2 greased loaf pans at 325 for 45 minutes to 1 hour.


Delrene’s Pumpkin Bars (Bread)

Hannah made these for Thanksgiving 2008 and took it to Leon’s and the Carter family get-togethers and it was a big hit! She made one batch and it was the perfect amount for her 6 mini-bundt stoneware pan. Noah and Neriah liked it too. (Hannah has a picture of it that I will try to post at a later date).

Pumpkin Bars (Bread)

4 eggs

1 2/3  sugar

1 c oil

2 cups pumpkin

2 c flour

2 t baking powder

2 t cinnamon

1 t salt

1 t soda

Beat together wet ingredients in lg bowl and dry in seperate bowl, pour wet ingredients over dry and mix til moistened. Spread in a 15 x 10 x 1 jelly roll pan OR in a mini-bundt or even a 9×13 (just cook longer) and bake at 350 for 25 minutes.


Pumpkin Chocolate Chip Muffins

Makes 12 muffins These are truly delicious!

 

1 2/3 c flour

1 c sugar

1 t cinnamon

1 t baking soda

1/4 t baking powder

1/4 t salt

1/4 c milk (2%)

2 lg eggs

 1 c pumpkin puree

1/2 c melted butter

1 c chocolate chips

Mix dry ingredients in large bowl, mix wet ingredients in seperate bowl and stir in chocolate chips, pour over dry ingredients and fold until moistened.  Bake in greased muffin pan for 20-25 at 350.


Weight Watchers Pumpkin Muffins

My mom got this recipe at Weight Watcher and 6 muffins is supposed to be 1 morning or mid-day meal (1 bread/1 fruit/1 protein/1 M/1/2 Vegetable) on the plan. -Penny

1 cup cooked pumpkin

1/4 c raisins (I omit these)

1/2 c grated carrots

2 eggs

Mix all in one bowl and then mix the following in second bowl and add to wet mixture.

2 t cinnamon

6 T flour

1/4 t Butter Buds or butter flavor

2 t baking powder

1/2 t baking soda

2/3 c dry powdered milk

2 t pumpkin pie spice

8 t sugar OR 4-5 packets of Sweet N Low

MIx well and add to wet mixture.

Spray 12 cup muffin pan with Pam, bake 350 for 25-30 minutes.

Serves 2
